This Twice Baked Potato Casserole is comfort food at its finest!
Ingredients

- 6 medium potatoes, cubed
- 1/4 cup butter
- 4 oz cream cheese, softened
- 2/3 cup sour cream
- 1/2 cup milk
- 1/2 tsp garlic powder
- 1 TBSP fresh parsley, chopped
- 2 cups cheddar cheese, shredded
- 2 green onions, thinly sliced
- 10 slices cooked bacon, crumbled
- salt and pepper to taste
Toppings:
- 1 green onion, sliced
- 2 slices bacon, cooked and crumbled
- 1/2 cup cheddar cheese
Instructions
- Before preparing, preheat the oven to 375F
- Cube your potatoes and boil them in water over the stove top for 10 minutes or until softened
- Add the boiled potatoes to a mixer and beat until smooth
- Stir in the remaining ingredients (except toppings) and spread into a 2 quart casserole dish
- Sprinkle with toppings and bake for 25-30 minutes or until cheese is melted and potatoes are hot
