This is by far the easiest freezer meal ever! When you are ready to cook the chicken it just all gets dumped in the crockpot, no other prep work is necessary. But wait! It does get better because this meal is only costs $5.60 to feed a family of four. It saves money and time – AWESOME!
Lime Garlic Chicken (Freezer Meal) ~ makes 3 meals
- 5 lb skinless boneless Chicken Thighs
- 12 TBSP fresh lime juice (4 -6 limes)
- 4 1/2 cups chicken broth
- 6 cloves garlic
- 4 1/2 tsp thyme
- 6 TBSP unsalted butter
- pepper to taste
- 4 1/2 cups Rice
To prep each individual meal evenly divide the 5 lbs of chicken into 3 separate Ziploc bags. Add the following ingredients in with each bag of chicken and seal the bag.
- 3 TBSP fresh lime juice
- 1 1/2 cups chicken broth
- 2 cloves garlic
- 1 1/2 tsp thyme
- 2 TBSP unsalted butter
- pepper to taste
Add 1 1/2 cups rice into a small Ziploc bag and seal. Add chicken bag and rice to large Ziploc bag and label.
When ready to cook thaw in fridge, then cook chicken in crockpot for 6-8 hours on low. Cook rice as directed.
Cost per meal $5.60 (prices my vary, the majority of my produce was bought at Grocery Outlet & the meat was purchased in a value pack at my local grocery store.)
