This is a quick dessert that is super simple to make, but looks really nice and tastes delicious.
Ingredients:
- 1 cup fresh raspberries
- 2 tablespoons white sugar
- 2 tablespoons orange juice or Triple Sec
- 1 3/4 cups heavy whipping cream
- 1 drop red food coloring
Process berries in a blender or food processor until smooth.
Strain mixture into a small bowl, and discard seeds. Add the sugar and Triple Sec (or orange juice), and stir until sugar dissolves.
In a saucepan on low heat, warm 1/4 cup of the cream and the white chocolate, stirring constantly until chocolate melts. Let mixture cool. Stir in 1 tablespoon of raspberry sauce, and the food coloring.
In a medium bowl, whip remaining 1 1/2 cup cream to soft peaks. Fold into melted chocolate mixture adding just a little at a time, until combined.
Put mouse in to clear glasses (martini or parfait glasses work well). To make them look pretty I add the raspberry puree at the bottom and swirl it around in the glass, then add the mousse.
You can also add a little puree to the bottom of the glass, then add mousse and on top make stripes with the puree across the top then in the opposite direction drag a fork or toothpick access the stripes. Add fresh raspberries to garnish.
