It’s a scientific fact that everything tastes better when bite-size. If you’re looking for a creative take on a classic breakfast favorite, look no further! These Pancake Bites can easily be customized with your choice of fillings. I’m partial to a chocolate chip-blueberry combo, but you can add anything! Drizzle or dip with warm Maple Syrup and enjoy!
Pancake Bites:
- 2 cups flour
- 2 TBSP sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cup milk
- 2 eggs
- 4 TBSP vegetable oil
- 1 tsp vanilla
Filling Options:
- Mini Chocolate Chips
- Blueberries (fresh or frozen)
- Jam
- Rainbow Sprinkles
Preheat the oven to 400 degrees. Prepare a mini muffin pan with non-stick cooking spray.
In a large bowl, mix the flour, sugar, baking powder, and salt.
In small bowl, beat together milk, eggs, oil, and vanilla. Slowly add to the flour mixture until combined.
Add the batter to muffin pan, filling them 2/3 of the way. Add your desired fillers – I like mini chocolate chips and blueberries.
Bake for 10-12 minutes, or until golden brown around the edges. Remove and serve with Maple Syrup. Enjoy!
