Here is something to keep you insides warm and toasty on a crisp fall day…Italian Tortellini Soup. Serve with french bread and a salad and you have yourself a meal. My family loves this!
Italian Tortellini Soup:
- 16 oz tortellini
- 1 lb Italian sausage
- 1 medium sweet onion
- 2-3 cloves minced garlic
- 1 cup diced carrots
- 3 cans (14oz) chicken broth
- 2 cups water
- 1 can diced tomatoes
- 3 tablespoons tomato paste
- 2 TBS Italian seasoning
- 1 tsp. salt
- 1 tsp. pepper
- 1/8 cup fresh basil
- shaved Parmesan cheese
In sauce pan boil water, add tortellini and boil for 10 minutes. Drain and set aside.
In large sauce pan, brown sausage. Add onion and garlic and cook for just a couple minutes.
Add carrots, chicken broth, water, diced tomatoes, tomato paste, italian seasoning, fresh basil and salt and pepper.
Cover and simmer for 30 minutes. Add tortellini and cook for 5 more minutes.
Serve and add fresh shaved or grated parmesan cheese. Enjoy!
