When taco night rolls around I used to be all about the homemade Pico de Gallo, but my tastes have changed. My favorite thing about Taco Tuesday is now the Guacamole! Nothing beats homemade Guacamole. Nope, not even fresh Pico de Gallo. It’s actually fairly quick and easy to make your own Guacamole so if you haven’t tried it yet I recommend you do.
Homemade Guacamole
- 4 ripe avocados
- 1/2 cup Roma Tomatoes diced (seeds removed)
- 1 JalapeƱo diced
- 2 cloves of minced garlic
- 1/3 cup red or white onion diced
- 1/4 cup cilantro
- lime juice from one lime
- kosher salt to taste
In a bowl, add chopped avocado. With a fork mash avocados. Make sure you don’t over mash, you want some of the avocados to be a little chunky. You can also invest in a handy Granite Mortar and Pestle set if you plan to make guacamole on a regular basis.
Add diced tomatoes, jalapeƱos, garlic, onions, cilantro, fresh lime juice, and salt. Mixed with a spoon until all incorporated. Enjoy!!
Guacamole will say fresh in the refrigerator for about 2 days. I recommend making this the day you want to eat it. Guacamole is not really a “make ahead of time”” kind of thing. When storing it in the refrigerator make sure you store it in an air tight container to prevent browning. This recipe will feed a crowd, so if you are just making guacamole for your family I suggest cutting the recipe in half (or even quarters if your family is small).
