This Homemade Coconut Ice Cream is the perfect treat for summer!
Ingredients

- 2 cups heavy cream
- 2 cups coconut milk
- 1 cup sugar
- 2 egg yolks
- 1 teaspoon vanilla extract
- 1/2 cup shredded coconut
Instructions
- Combine cream, coconut milk, sugar, egg yolk, extract, and whisk until combined
- Add ingredients to ice cream maker, mix for 20 minutes until it doubles in size
- Add the shredded coconut, and mix until well combined
- Freeze for 1-2 hours
Notes
You will need an ice cream maker, I use the Kitchenaid Ice cream maker attachment and my sister owns the Cuisinart Pure Indulgence 2-Quart Ice Cream Maker. We both are quite happy with our machines.
