I love making festive cupcakes for the holidays. These are quick and easy to make and they look adorable. The gingerbread on top is super sweet and I combined some green plaid cupcake liners that I think ties the gingerbread theme together nicely.
Gingerbread Cupcakes
- 8 TBSP butter
- 1/2 cup brown sugar
- 1 egg
- 1 1/2 tsp vanilla
- 1/2 cup molasses
- 1/2 cup milk
- 1 1/4 cup flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp allspice
- 1/4 tsp cloves
Frosting
- 1/2 cup butter
- 1/4 cup cream cheese
- 1 tsp vanilla
- 1/2 tsp cinnamon
- 4 cups powdered sugar
- 1-2 TBSP milk
Decoration:
- cupcake liners
- gold and white sprinkles
- small gingerbread men
- Wilton decorator bags
- large star tip
To make the cupcakes, combine dry ingredients and set aside( flour, baking soda, baking powder, cinnamon, nutmeg, cloves and all spice). In mixer whip butter and add sugar. Mix in eggs, vanilla, and molasses. Gradually add dry ingredients and milk. Mix well, scraping the bowl with a spatula. Mix for just a few more seconds and add to cupcake pan lined with cupcake liners. Fill each liner 2/3 full.
Bake at 350 for 18 minutes. Remove from oven and allow to completely cool. To make frosting, whip butter and cream cheese. Add vanilla, and cinnamon. Next, gradually add powdered sugar and milk. Whip until combined. Place a star tip in bottom of decorator bag snip off end with scissors and squeeze in a swirling motion onto cupcake. Finish off with sprinkles and a single gingerbread man.
