This recipe is fresh and delicious! I love how versatile it is, you can eat it as a salad, as a salsa or even use it as a topping on fish. It is fantastic, fresh, healthy and delicious. WIN!
Fresh Black Bean Salad
- 2 roma tomatos
- 1 bell pepper
- 1/2 red onion
- 1 avocado
- 1-2 jalapeños
- 1 can sweet corn
- 1 can black beans
- 1/2 cup cilantro
Dressing:
- 4 TBSP olive oil
- 5 TBSP fresh lemon juice
- 2 TBSP red wine vinegar
- 1 1/2 tsp salt
- 1/2 tsp pepper
Chop all fresh ingredients and add to a bowl. Remove black beans and corn from cans, drain and rinse. Add to bowl with fresh veggies.
In small bowl, add dressing ingredients and whisk together.
Add dressing to fresh bean salad and mix thoroughly. This recipe is good right away, or you can store in refrigerator for later. I personally think it just gets better with time. Enjoy!
