I have mentioned this before, but fixing dinner is not my strong suit. I don’t necessarily mind cooking dinner, but dinner prep time seems to be the craziest time of the day. The two hours before dinner are always the busiest, the kids need help with their homework, Allie needs to be picked up from choir, the boys need to go to basketball practice. I have tried a weekly menu plan, but that doesn’t really help me with the crazy time when I am supposed to be preparing dinner.
I heard about freezer cooking, and I knew I had to give it a try. I did lots of research, read book reviews and finally decided to give it a try. I am a big time researcher, anything I do has to be researched first. I am the kind of person that needs instructions for everything! I need a list that tells me exactly what it is I am supposed to do. I knew I wanted to buy a cookbook to help me with my new adventure. I read all the reviews at Amazon, and finally decided on the Don’t Panic Dinner’s in the Freezer cookbook.
I loved the introduction in the book, it explains all about the shopping and prep work you need to do. It gives you great advice on what is best when it comes to freezing your meals. Plus, I found so many recipes that I wanted to try. I was so impressed with the book that I went ahead and ordered their new book Don’t Panic More Dinner’s in the Freezer.
So, with my two new cookbooks and the instructions I learned, I started my cooking day. I have to say I was pleasantly surprised, it took a lot less prep time than I thought it would. I made the following items from both cookbooks:
Mom’s Breakfast Waffles
Sassy Sloppy Joe’s
Hawaiian Chicken
Homemade Baked Beans
Barbecue Spareribs
Chicken Cilantro Enchiladas
Beef Pasta Bake
Poppy Seed Pound Cake Muffins
I did had one minor incident where I set the freezer bag of the Hawaiian Chicken on the dining room table, and it all came pouring out, because I hadn’t zipped it yet. OOPS! Plus, I am a very messy cook, so there was lots of cleaning up to do. The good part though is that there will be a lot less cleaning time during the rest of the week, because all of the prep work has been done.
It is such a good feeling having food in the freezer and ready to go. I think this is going to be a HUGE time saver for me. All I have to do now it pull out the meal, defrost it and then throw it in the oven or crock pot and I am set. I am seriously excited about my new discovery of freezer cooking, you should give it a try!
