Easter Cupcakes

Easter will be here before you know it! Do you know what you’ll be making for dessert? There are so many cute products out there to make super cute cupcakes! I like the fact that you can make cute cupcakes with out a lot of effort. These cupcakes I made were quick and easy and make me look a cupcake expert.

Here is what you will need to make these Easter Cupcakes:

• Cake mix (plus ingredients on box)

Flosting:

• 1/2 cup butter
• 1/2 cup shortening
• 4 cups powdered sugar
• 3 Tbsp milk

Here is what you need to decorate the cupcakes.  I purchased the Wilton Easter Kit which contained some of these items (and extras, so I can make more fun spring cupcakes too)

• Wilton Bunny feet
• Wilton lamb heads
• shredded coconut
• cupcake liners
• mini marshmallows

Make cupcakes per cake mix instructions.  Bake cupcakes in pretty spring cupcake liners.  Let cool completely.   To make frosting whip shortening and butter, add powdered sugar 1 cup at a time, gradually add milk.  Whip until light and fluffy.

Lamb cupcakes:  Frost cupcakes and add lamb head to the edge of cupcake, then add mini marshmallow over the entire cupcake.

Bunny buns cupcakes:  Frost and then dip cupcake in bowl of coconut.  Add one mini marshmallow to middle of cupcake.  Add the feet and you are done.   Super quick and super simple.   The kids will have a ton of fun eating these cute Easter cupcakes.
