Dried Mango Oatmeal Cookie:
- 1 1/2 cups flour
- 1 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/2 baking powder
- 1/2 tsp salt
- 1 cup butter
- 1 cup brown sugar, packed
- 1/2 cup sugar
- 2 large eggs
- 1 1/2 tsp vanilla
- 3 cups old fashioned oats
- 1 cup dried mangos, chopped
- 1/2 cup macadamia nuts, chopped (optional)
Preheat the oven to 375. In a mixing bowl, add the dry ingredients – flour, cinnamon, baking soda, baking powder, and salt.
In a mixer, cream together butter, brown sugar, sugar, and mix until combined. Add in the eggs and vanilla and gradually mix in the dry ingredient mixture. Add in oats, dried mangos, and nuts.
Scoop the dough with a cookie scoop and place on a baking sheet and into the oven. Cook for 12 minutes or until golden brown.
After baking, let cool on the baking sheet for a few minutes before transferring to a wire rack. Enjoy!
