This festive Cranberry cake is perfect for the holidays! You get yummy holiday cranberries and thanks to the powdered sugar it looks like it was dusted with freshly fallen snow.
Cranberry Christmas Cake:
- 2 eggs
- 1 1/3 cups sugar
- 1/2 butter
- 1 tsp vanilla extract
- 1/2 tsp almond extract
- 1 1/3 cup flour
- 1 1/2 cup fresh cranberries
- powdered sugar for garnish
Preheat oven to 350 and prep a 9×9 pan with non-stick cooking spray. Beat eggs and sugar together until peaks form. Add butter, and extracts and mix together. Mix until well combined, it will probably take about two minutes.
Gradually add flour until just combined. Gently fold fresh cranberries into batter. Bake at 350 for 35-40 minutes. Allow to cool completely and garnish with powdered sugar. Enjoy!
