Confession: I didn’t think I would like avocados so I never tried them. Do I sound like a 5 year old, or what? I finally tried them last year and I love them! Now I use them in everything…salads, sandwiches, toast and of course in my guacamole. I love these Chicken Avocados Roll-Ups, I make them when I want a quick and easy dinner.
Chicken Avocado Roll-Ups:
- 2 cups shredded cooked chicken
- 2 avocado pitted and diced
- 1/2 cup shredded cheese
- 1/2 cup diced tomatoes
- 4 stocks of green onion minced
- 1/4 cup minced cilantro
- 1/4 cup plain greek yogurt
- 1 diced jalapeno
- Salt and pepper to taste
- 4 -10″ flour tortillasIn large bowl add avocado, cheese, green onion, tomatoes, jalapeño, cilantro, yogurt, lime juice salt and pepper. Stir with spoon until everything is fully combined and the avocado is chunky and mashed.Spread mixture equally on each of the 4 flour tortillas, then sprinkle the chicken evenly over the avocado mixture. Roll the tortilla and cut into slices about 1″ thick. Serve right away or refrigerate. Best if eaten on same day.Print
