Do you have an abundance of peaches? You can make some Peach Pie filling that will be great to have on hand, or will be nice for gift giving too. The process is fairly simple and straight forwards, so even if you haven’t canned much before you can tackle this project.
Canned Peach Pie Filling (Makes 5 Quarts)
- 10 lb Ripe Peaches
- 1 3/4 cup Lemon Juice
- 2 Cups Clear Jel, 1 lb. Available through Amazon (Buy regular not instant)
- 8 Cups sugar
- 1 Teaspoon Cinnamon
The first step is to peel the peaches, the easiest way to do this is by dropping the peaches into boiling water for 60 seconds, then directly putting them into ice water. The peels should slip right off. Once you get them all peeled, slice the peaches.
Add all the ingredients at once into a large stainless steel pot. Stir constantly over medium heat until thick and bubbly, and then cook for 2 more minutes.
Add pie filling into quart jars, and boil in canner for 25 minutes. Make sure you check your canner instruction book for the exact time you will need to process these.
Each quart jar will make one pie. These make a great gift for friends or even to have them on hand for yourself. It is so nice having pie filling pre-made, because it makes baking a pie a cinch!
I do not recommend trying to use something other then Clear Jel. Clear Jel is not available at most stores, so you will need to plan ahead. Using the Clear Jel makes for a beautiful presentation, other type of thickeners do not can well.
