These Cadbury Mini Egg Cookies are a perfect combo of pastel sweetness and rich chocolatey goodness!
Ingredients

- 1 cup crushed Cadbury mini eggs
- 1 cup semi sweet chocolate chips
- 1 cup butter
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 1 tsp Vanilla
- 2 cups flour
- 1/2 cup rolled oats
- 1 tsp baking soda
- 1/2 tsp salt
Instructions
- Preheat oven to 350
- Measure out crushed Cadbury mini eggs and chocolate chips and set aside
- With a mixer, cream together the butter and sugars until smooth – should be light in color and fluffy in texture
- Add the eggs and vanilla and mix
- When combined, stop the mixer and add flour, oats, baking soda, and salt
- Start mixing slowly, until the flour mixture is combined
- Fold in the Cadbury eggs and chocolate chips
- Scoop the dough into 1/4 inch balls and place on a baking sheet lined with parchment paper
- Bake for 12-15 minutes or until golden brown
- Remove from oven and sprinkle with extra crushed mini eggs
- Let cool and transfer to a cooling rack
