Here is something to keep you insides warm and toasty on a crisp fall day…Italian Tortellini Soup. Serve with french bread and a salad and you have yourself a meal. My family loves this!
Italian Tortellini Soup:
- 16 oz tortellini
- 1 lb Italian sausage
- 1 medium sweet onion
- 2-3 Â cloves minced garlic
- 1 cup diced carrots
- 3 cans (14oz) chicken broth
- 2 cups water
- 1 can diced tomatoes
- 3 tablespoons tomato paste
- 2 TBSÂ Italian seasoning
- 1 tsp. salt
- 1 tsp. pepper
- 1/8 cup fresh basil
- shaved Parmesan cheese
In sauce pan boil water, add tortellini and boil for 10 minutes. Â Drain and set aside.
In large sauce pan, Â brown sausage. Â Â Add onion and garlic and cook for just a couple minutes.
Add carrots, chicken broth, water, diced tomatoes, tomato paste, italian seasoning, fresh basil and salt and pepper.
Cover and simmer for 30 minutes.  Add tortellini and cook for 5 more minutes.
Serve and add fresh shaved or grated parmesan cheese. Â Enjoy!
