Every year my son wants an ice cream cake for his birthday, he has never been crazy about cake with lots of frosting. In the past I would go to ice cream store and order a cake and end up spending close to $30 for a cake. However, the last couple years I decided to make my own. I found out it was super easy, looks just as nice as the designer cakes and costs about $10. Haven’t bought one of those fancy cakes since.
Ingredients:
- 1 box chocolate cake mix + ingredients for cake (mine calls for 3 eggs & 1/2 cup oil)
- 2-half gallon Oreo ice cream
- 1 package of Oreos (Shh! don’t tell my son I didn’t use real Oreos)
- 1 jar hot fudge or chocolate sauce.
- 1 can whipped cream or frosting (to decorate)
First make cake as directed, and use 2-8 inch pans (you will only use one for the ice cream cake). I sometimes do 1-8 inch pan and use the rest for cupcakes.
Once you the cake is cooled, remove it from pan. With a knife cut off top of cake so it has a nice and flat top. Place the cake in the center of a 10″spring form pan. Wrap with plastic wrap and put in freezer for at least two hours.
Once the cake is nice and frozen. Microwave hot fudge until it is easy to spread and pour over the top of the cake (use about 1/2 jar). Next, add 10 crushed Oreos onto the top of the fudge. Carefully microwave half gallon ice cream until it is a little soft and easy to spread with a spacucla. I usually do this in 20 second increments it never takes more then a minuete.
Begin to scoop ice cream around the sides of the cake. Be sure to press down firmly to make sure there are no air pockets. Fill ice cream to the top of the pan. You will probably have some ice cream left over.
Place plastic wrap or wax paper on the top and make sure it is nice and smooth. Freeze for at least wo hours.
Finally remove from springform pan and add crushed oreos on top and decorate the edges with whip cream or frosting. If you like you can drizzle the extra hot fudge over the top of the cake and refreeze. This cake will serve about 10-12 people. Enjoy!
I recommend that everyone have a Springform pan in their kitchen. Amazon has a great deal on the Mrs. Anderson’s Baking Non-Stick Springform Pan (10-inch) and it gets a ton of 5 star reviews!
