No Bake Lemon Cheesecake in Jars

No Bake Lemon Cheesecake in Jars are the perfect combination of tart and sweet all rolled into one dessert!


Ingredients

Scale

Crust:

  • 6 graham crackers
  • 2 TBSP sugar
  • 2 TBSP melted butter

Filling:

  • 8 oz cream cheese
  • 1 cup cream
  • lemon juice from one lemon
  • 1 tsp lemon zest
  • 1 tsp vanilla
  • 1/3 powdered sugar

Garnish:

  • whip cream

Instructions

  1. For crust, add the following to a food processor: graham cracker, sugar and butter.  Pulse until you have a medium fine crumb mixture.  
  2. Add crust mixture to twelve individual canning jars.
  3. In mixer whip cream cheese, and cream until smooth.  Add sugar and vanilla. On low setting add lemon juice, lemon zest and mix until combined. 
  4. Add filling to the twelve canning jars.
  5. Chill for at least 1 hour. Garnish with a dab of whip cream.
