Description
This Lemon Chicken Orzo puts a unique spin on a simple pasta dish!
Ingredients

- 1 TBSP olive oil
- 2 TBSP butter
- 1/2 onion, chopped
- 1 lemon, juiced
- 3 cloves garlic, minced
- 1/2 tsp Italian seasoning
- 1 cup orzo
- 2 cups chicken broth
- 1 cup heavy cream
- 2 cups rotisserie chicken
- 1/2 cup parmesan cheese
- 2 cups spinach
Instructions
- Add oil to a large frying pan
- Add the butter and chopped onion over medium heat and saute for 3-4 minutes
- Add the minced garlic, Italian seasoning, and Orzo
- Cook for 2-3 minutes, stirring often
- Stir in chicken broth, lemon juice from half of lemon, and cream
- Once it starts to bubble, lower the heat and continue to cook for 10 minutes, stirring often
- Add salt and pepper and stir in shredded chicken
- Remove from heat and add parmesan, spinach, and lemon juice from the other half of lemon.
- Cover pot for 3-5 minutes (check and season with more salt if needed)
