Lemon Cheese Coffee Cake

Description

Lemon Cheese Coffee Cake is super easy to make and perfect for spring!


Ingredients

Scale

Crumb Topping:

  • 2/3 cup flour
  • dash of salt
  • 3 TBSP light brown sugar
  • 5 TBSP sugar
  • 4 TBSP unsalted butter (melted)

Cake:

  • 1 1/2 cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 6 TBSP unsalted butter (softened)
  • 1 cup sugar
  • 1 tsp vanilla
  • lemon zest from one lemon
  • 2 eggs
  • 3/4 cup sour cream
  • 1 cup lemon curd (store bought or homemade)

Cream cheese filling:

  • 8 oz cream cheese (softened)
  • 1 eggs
  • 1/2 tsp vanilla
  • 4 TBSP sugar

Homemade lemon curd:

  • 1/2 cup fresh lemon juice
  • 2 tsp lemon zest
  • 1/2 cup sugar
  • 2 eggs
  • 5 TBSP unsalted butter

Instructions

  1. If you choose to make your own lemon curd in sauce pan, melt butter.  
  2. Remove from heat add sugar, lemon juice and lemon zest, whisk until combined.  Add eggs and whisk well.
  3.  Place back on heat source at medium heat and cook for 5 minutes or until all sugar dissolves and the mixture thickens.
  4. Preheat the oven to 350 F.  Line 8×8 square pan with parchment paper leaving an overhang on the sides.  Spray with non-stick spray and set aside.
  5. Make Crumb topping.  In bowl add flour, sugar, brown sugar, and salt.  Then add melted butter and stir until crumbs form.  
  6. Set in fridge until really to use.
  7. To make the cake beat butter for one minute,  then add sugar and beat until creamy.  Add lemon zest,  vanilla, and eggs continue to mix.   Add Sour cream and mix.  Next add flour, baking powder, and salt.
  8.  Spread half of the batter in prepared pan.  
  9. Spread 1 cup of lemon curd over the batter, do not go all the way to the edges as it will burn.  
  10. Spoon remaining batter on the top.
  11. Beat cream cheese, vanilla, sugar, and egg until smooth.  
  12. Spread cream cheese mixture over batter.  Sprinkle with crumb topping and bake about 55 minutes or until the center has set.  
  13. Cool for 30 minutes in the pan, then lift out holding the parchment paper on each side and transfer to the a cooking rack and cool completely.
