Description

This Ground Beef Shell Skillet is packed with flavor and loaded with cheesy goodness!


Ingredients

Scale
  • 16oz box of medium sized pasta shells
  • 1lb ground beef
  • 2 TBSP olive oil
  • 1/2 medium onion, finely diced
  • 2 cups fresh baby spinach
  • (2) 14.5 oz cans of diced tomatoes
  • 3 TBSP tomato paste
  • 1 cup beef broth
  • 2 tsp Italian seasoning
  • 3 garlic cloves, minced
  • pinch of red pepper flakes
  • 3/4 cup grated parmesan cheese
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 cup half and half
  • 3/4 cup water, reserved from cooked pasta


Instructions

  1. Cook the pasta as directed on the box and drain, reserving 3/4 cup of the pasta water for later
  2. Toss the cooled pasta with a TBSP of olive oil to coat (set aside)
  3. In a large skillet, over 1 TBSP of olive oil over med-high heat
  4. Add the onions and allow to cook until translucent, about 1-2 minutes
  5. Add the ground beef and continue to cook for another 7-9 minutes or until beef is cooked through
  6. Drain off excess grease
  7. Add diced tomatoes, spinach, beef broth, tomato paste, garlic and seasoning to beef skillet
  8. Cook until the spinach cooks down and all the ingredients are mixed together
  9. Reduce the temp to med-low and add pasta water, half and half, and cheese
  10. Continuously stir, allowing cheese to melt and combine into the mixture
  11. To finish, add the cooked pasta and mix in until the pasta is well coated
  12. Garnish with extra cheese and fresh parsley
