Description
These Sugar Cookie Bars are basically sugar cookies with frosting…so good!
Ingredients

For the Cookies:
- 1 cup butter, softened
- 1 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 2 3/4 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp kosher salt
For the Frosting:
- 1 cup butter, softened
- 1 tsp vanilla extract
- pinch of kosher salt
- 3 cup powdered sugar
- 3 Tbsp milk
- 1 drop red food coloring (optional)
- sprinkles, (optional)
Instructions
To make cookies:
- In mixing bowl add butter and sugar and beat on medium high while scraping sides the sides of the bowl
- Continue to mix while adding vanilla and eggs
- Next add in the dry ingredients, flour, baking powder and salt
- Continue to mix and scrape the sides of bowl and beat for another 20 seconds to make sure everything is combined well
- Line a 15 x 10 x 1 baking sheet with foil
- On top of foil line pan with parchment paper
- Using floured hands to press dough into pan
- I recommend using a pastry roller to make nice and smooth
- Bake at 350 degrees for 18 minutes, until the edges begin to brown
- Remove from oven and let them cool completely
To make frosting:
- Mix butter and vanilla on high for about two minutes until mixture becomes nice and fluffy, add salt, powdered sugar and milk
- Continue to beat for 3 minutes
- Scrape the sides of the bowl and beat for one more minute (if desired, add food coloring)
- Spread frosting over cooled cookies and add sprinkles and cut into squares
