These Blueberry Pie Bars would be great to bring to summer picnics or family get togethers!
Ingredients
Crust and topping
- 1 1/2 cups flour
- 3/4 sugar
- pinch of salt
- 1 1/2 stick chilled butter, cubed
Filling
- 2 eggs
- 1 cup sugar
- 1/2 cup sour cream
- 1/3 cup flour
- pinch of salt
- 3 cups fresh blueberries
Instructions
- Preheat oven to 350 and grease 9×9 glass baking dish, set aside for later
- In a large bowl add flour, sugar, salt, and cubed butter, mix with electric mixer until the mix has a crumble consistency
- Reserve 3/4 cup of mixture for topping
- Press the remaining mixture in the bottom of glass baking pan
- Bake for 15 minutes or until golden brown
- Remove from oven and set aside
Filling:
- Whisk eggs in large bowl add sugar, sour cream, flour and salt
- When combined gently stir in fresh blueberries
- Add the mixture evenly over the baked crust, then top with the reserved crumble
- Bake for 50 minutes or until top is lightly browned
- Cool for one hour prior to serving
