These Berry French Toast Muffins are the perfect, fuss-free way to enjoy a classic breakfast treat!
Ingredients

- 1 loaf of bread, cubed into 1” pieces
- 1 cup milk
- 2 TBSP maple syrup
- 2 eggs
- 1 tsp vanilla
- 1/4 cup berry jam
- 1 TBSP sugar
- 1 tsp cinnamon
- 2 cups mixed berries (raspberries, blue berries and blackberries)
Instructions
- Chop the bread into cubes and add to a bowl
- In a separate bowl, beat together the milk, eggs, vanilla, sugar, syrup, jam and cinnamon
- Pour over the bread cubes, add 1 1/2 cup berries and fold together (save the extra berries for garnish)
- Fill 12 muffin tins with the cubed bread piling them high, pour any excess egg mix over each muffin
- Bake at 350 for 35 minutes
- Remove and serve with maple syrup, powdered sugar, and fresh berries
