I love this recipe for no bake cheesecake, it’s quick and easy to make. I enjoy this recipe because it is not overly sweet, it is the perfect combination of tart and sweet in one dessert. Plus, the canning jars make them the perfect size and it’s great because there is no serving required, everybody grabs their own.
No Bake Lemon Cheesecake:
Crust:
- 6 graham crackers
- 2 TBSP sugar
- 2 TBSP melted butter
Filling:
- 8 oz cream cheese
- 1 cup cream
- lemon juice from one lemon
- 1 tsp lemon zest
- 1 tsp vanilla
- 1/3 powdered sugar
Garnish:
- whip cream
For crust, add the following to a food processor: graham cracker, sugar and butter. Pulse until you have a medium fine crumb mixture. Add crust mixture to twelve individual canning jars.
In mixer whip cream cheese, and cream until smooth. Add sugar and vanilla. On low setting add lemon juice, lemon zest and mix until combined. Add filling to the twelve canning jars.
Chill for at least 1 hour. Garnish with a dab of whip cream. Enjoy!
