Usually potatoes, but We’ve recently fell in love with squash. Delicato, or Acorn. So that’s been our go to side dish this fall. Microwave in a little water, then add butter!!!

We have been loving our winter vegetables as side dishes! My favorite is brussels sprouts sauteed with olive oil, crushed red pepper flakes and a touch of brown sugar to caramelize them.
